In the Pink


Oh, but I'm feeling better. Thank you for your kind wishes and commiseration earlier this week. I'm sleeping well, my head is almost clear and I've rejoined the land of the living. 


Walking through the grocery store these pink gerberas tempted me and I succumbed. They are brightening up the entry way which has been looking a little blank after the holidays. I managed to put everything away but didn't get the everyday stuff put back. That's still to come.
 

I also felt well enough to try a new salad. No real recipe, although I used a few tricks I'd read about - like massaging the kale. I used coarse salt and Persian Lime Olive Oil. The result was tender kale and hands that smelled wonderful. 

Do you chop or tear your greens? I prefer them cut. I think they are crisper that way and crisp is how I like them. I will tear the soft lettuce that grows in early spring, or butter lettuce, but for the rest - chop, chop.

I cut the kale, one bunch from the grocery store, after removing the ribs. Into a bowl with a sprinkle of coarse salt and a drizzle (1 Tablespoon) of olive oil. Then in with the well-washed hands, tossing, gently squeezing, tossing. I added sliced radishes, pomegranate seeds, chopped onion, grated carrot, sunflower seeds, diced cucumber and goat cheese to the kale. Another drizzle of olive oil and one of Cranberry Pear Vinegar (use whatever you've got). Toss again. Eat. Any remaining cold germs fled away in horror from all those vitamins.

There's plenty leftover for dinner to go along with our roasted sweet potatoes and roast chicken. I know I'm feeling better when I feel like cooking again.

    Lorrie, your salad looks delicious! I've not heard of massaging kale before. About your comment on today's post, I completely agree with you. After receiving some negative feedback, I decided to shorten the post and close it's comments. I hope you aren't offended that I closed the comment feature. I just wanted you to know that I read your comment and appreciate your words. Maybe my blog isn't ready for such a serious topic.

  2. Glad you're feeling better -- completely agree with your earlier post, as you will know. And I've been massaging kale ever since Thanksgiving before last when my daughter told me about the technique (isn't it fun to learn from our kids?!) I've had Les Faux Bourgeois on my list of restaurants to get to for 3 or 4 years now -- Must! Do!

  4. Supper does sound delicious. I tear. Have never used Kale, though I know should because it is so healthy. I would have given in to the daisies, too, just because it is January and they are pink. Glad that your are back in the pink again.

  7. Your salad is beautiful - that is enough to make anyone feel better. I'm glad you are "in the pink" - love the flowers to cheer the house up. Don bought me some very large red carnations about a week before christmas - they are still as fresh as the day he bought them.

  14. I'm glad that you are feeling much better now and sleeping again. The flowers are so pretty and I wanted to buy tulips yesterday but was afraid they'd get too cold in the -20C temperatures on the way home. Your salad looks so fresh and healthy.

  18. I'm really glad you are on the road to recovery...your salad makes me know what I want for dinner. Mr. Sweet is still in the SOUP MODE but I want salad. My mama always told me that cutting lettuce with a knife made it wilt quicker so I tear my lettuce...wives tale..???

  20. Glad you are better. I had no idea about massaging kale! Such important knowledge! Thank you! And, yes, your salad looks great. We had roasted chicken and roasted sweet potatoes Wednesday night.... a favorite of mine! It's cold and wet here in southeast Texas...... staying inside.
