Tastes of Spring
I hated asparagus as a child and I still don't like it steamed or boiled. But I discovered that roasted asparagus is wonderful, and so I thought maybe sauteeing would be acceptable as well. It is! I sauteed asparagus in olive oil, letting the bottom brown slightly before stirring it. At the end I threw in some grape tomatoes and heated them just until a few skins popped. Mmm - sweet and good!

I don't care for them either and we used to grow them when I was a child, I have done them in the oven 350 for 15 mins or so in olive oil and kosher salt with a hint of lemon juice...and the family loves them...will have to give this a try...I won't like it lol, but they will !!
ReplyDeleteThanks for the tip,

I love to saute' asparagus. When it's in season I eat it two or three times a day from my garden! I also love to add it to scrambled eggs for breakfast. I cook the asparagus in EV olive oil & let them get a little crisp then add the egg. Yum!
ReplyDeleteI always saute it! Thanks for the idea about the tomatoes!! I will try that this week. Thanks for commenting on my blog. You need to put your email in your profile so I can email you. I COULD look you up on CPA...but that would take more effort.
ReplyDeleteThanks for the idea Lorrie. I do like roasted vegetables and had not thought of roasting Asparagus. I wonder if it is less stringy this way.
