A Christmas Fruitcake


The Hostess of the Humble Bungalow posted a recipe for fruitcake the other day. I'm not a fan, but the man I love really enjoys it, so I make it for him. He doesn't like it too sweet, nor full of citrus peel. I have a dark cake I usually make, but this recipe sounded good.

So I chopped the fruit, poured the brandy over it, stirred it occasionally and let it sit overnight. I toasted the nuts (using almonds in place of pine nuts), and let them cool. I cut the marzipan into cubes and put it onto a plate and into the freezer. I let the butter soften on the counter top overnight.

I carefully buttered the pans and lined them with parchment paper.

The next morning, I creamed, measured, stirred and inhaled the wonderful scents of spices, brandied fruit and buttery goodness.  I spooned the mixture into the pans and set them into the oven to bake. Ah, what a glorious scent.

When the baking time was nearly complete, I had a horrid thought.


Yes, Yours Truly had forgotten the marzipan in the freezer. And those marzipan cubes are what intrigued me in the first place.

The cake is still delicious - I had a piece myself. And the marzipan cubes are good for nibbling on. But I think I'll put them away for another use.

  3. Oh, I hate it when I do that!! I have done this numerous times--skipped an ingredient and then found when typing it out for my recipe blog that I had neglected something!

  6. Oh non ! Je pense que ça doit être meilleur avec la pâte d'amande (parce que j'adore ça, et en ce moment en Allemagne il y en a plein partout pour Noël), mais le gâteau a quand même une tête sympathique.

    At least you left out a non-essential ingredient... let's just say that brownies minus the sugar are quite disgusting!!

  9. That made me smile! It's a bit like finding the salad in the fridge at the end of a dinner party.....something any of us could do. I'll be you'll find another use for that marzipan.
